Microperforated moulds are used without cheesecloth. The grooving pattern left on the cheese will lead to a smooth and perfect rind for aging. These moulds give higher yields due to lower pressure used and shorter pressing time. They are also easily integrated in automated production lines and are washed in tunnels and COP tanks.
