Consistent ricotta, from whey to finished product
A controlled flocculation and draining for whey cheeses.
Built to recover whey solids for ricotta production
Producing ricotta at industrial scale means reliably recovering the solids left in whey after cheesemaking while managing the final product's texture and moisture.
Fromagex helps dairy processors identify flocculation and draining equipment that fits their production goals, backed by COMAT’s technical expertise.
This equipment can also be used for Requeson, Paneer, and other whey cheeses.

One Line, four components
This production line is fed by a preheating system with milk, whey, or another mix. The entire line is designed for CIP cleaning. The main elements of the line consist of the following:
Flocculation vat
Whey flocculation takes place in the conical bottom vat with direct steam and acid injection. The wall-mounted glass window allows the control of the different phases.
Draining system
The belt collects, drains and conveys the finished product into a collection hopper. Its double inclined and partially overlapping draining belts, with variable speed, allows precise control of the final characteristics.
Homogenizer
Buffer Tank
A buffer tank is used as intermediate storage to balance flow between the draining and dosing steps.
Features
3 key advantages of working with a Comat ricotta line:
Yield
From the flocculation tank to the draining belt, the line reduces the loss of solids and controls the product moisture to increase the yield.
Production consistency
Steam-injection flocculation and controlled drainage speed are the two steps to achieve consistent Ricotta.
Automation
The complete line reduces manual transfer between the different steps to improve hygiene, labor and efficiency.
